Bokasso sits at a higher altitude than most other sites in Sidama, making it challenging to evaluate the quality of the coffees grown there immediately after harvest. They eventually open up, like red wines rich in tannins, and reveal their amazing complexity and depth several months after.
It can be a very satisfying experience to drink this coffee slowly and pick up on its evolving flavour as the temperature of the brew goes down.
